This Roman-style one-pan chicken dish is so delicious looking. I am going to make it tonight because my husband invited his boss over for dinner. Not knowing what to cook, I started frantically searching the internet for an impressive recipe that used chicken breasts. I stopped my search when I found this Roman-style chicken breast recipe by Cook N Share on Youtube because I knew I had struck gold! This recipe is a simple one-pan dish that has lots of tomatoes, red bell peppers, and yellow bell peppers, then garnished with Italian capers and fresh oregano. The colors in this meal are amazing and are so reminiscent of my trip to Italy. That trip was one of the most amazing experiences of my life and I truly fell in love with the beautiful country of Italy, especially the food.
- 3 boneless, skinless chicken breasts
- 1 red bell pepper (sliced)
- 1 yellow pepper (sliced)
- 3 cloves of garlic (chopped)
- 2 scallions (chopped)
- 1 can of diced tomatoes
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- Fresh oregano (or basil to garnish)
- Olive oil (for frying the chicken breasts)
- 2 tablespoons capers
- Salt (to taste)
- Pepper (to taste)
First, you will sautee the seasoned chicken breasts in a little olive oil. Then, remove them from the pan and set aside while you make the sauce.
Then, you will add the scallions, garlic, red bell pepper, yellow bell pepper, dried parsley, and dried thyme to the skillet that still contains the meat drippings. Cook those ingredients until they are caramelized, then add the tomatoes and chicken breasts. Simmer the dish for 20 minutes on a low heat and garnish with capers and oregano, then serve.
